POLENTA EGGPLANT LASAGNE

Kerry Hannawell of Silver Lake, California came up with this delicious vegetarian entrée. Make polenta ahead.

TOMATO SAUCE

2 tablespoons olive oil

½ small onion, chopped

2 garlic cloves, minced

1 (28-ounce) can crushed tomatoes

1 teaspoon dried sage

salt and freshly ground pepper

LASAGNE

½ (13.2-ounce) package (about 1 cup) instant polenta

2 medium eggplants, peeled and cut crosswise into ½-inch slices

olive oil for sprinkling

2 cups grated smoked mozzarella

¼ cup grated Parmesan cheese
